This flavourful, time-saving, shredded cheese is perfect for omelets, loaded baked potatoes, casseroles or as a salad topper!
Ingredients
- 2 eggs, beaten
- 15 ml (1 tbsp) 3.25% milk
- Salt and pepper, to taste
- 15 ml (1 tbsp) salted butter
- 60 ml (1/4 cup) Armstrong Mmmm… Bacon Shredded Cheese
- 10 ml (2 tsp) fresh parsley, chopped
Directions
- In a bowl, whisk the eggs and milk with a fork. Season with salt and pepper.
- Heat the butter in a non-stick pan over medium heat. When the butter has melted, pour in the egg mixture and stir gently.
- Continue cooking for 1-2 minutes, until the eggs begin to set. Sprinkle with 45 ml of Armstrong Mmmm… Bacon shredded cheese and fold the omelette into a half-moon shape. Continue cooking for about another minute or until the cheese has melted.
- Top with the remaining cheese and parsley.
