Spinach, Potato, and Havarti Cheese Pie

Say yes to a weekday meal that looks elaborate… but takes a mere 10 minutes to prepare! Everyone will rave about this spinach pie recipe with potatoes and Havarti Cheese — the creamy taste of our cheese does a wonderful job of enhancing all of the other ingredients. Serve with a side salad and dressing.

Ingredients

  • 1 garlic clove, finely chopped
  • 1 pinch dried oregano
  • 3 eggs • 250 mL (1 cup) 5% cooking cream
  • Salt and pepper, to taste
  • 23 cm (9-inch) store-bought pie crust
  • 200 g (2 cups) Armstrong Havarti Cheese, grated
  • 2 medium-sized potatoes, cooked, peeled, and cut into 1 cm (¼-inch) rounds
  • 250 mL (1 cup) spinach, cooked

Directions

  1. Preheat the oven to 180º C (375º F).
  2. In a bowl, use a whisk to combine the garlic, oregano, eggs, and cream. Season with salt and pepper.
  3. Filled the pie crust with alternating layers of Armstrong Havarti Cheese, potato slices, spinach, and the egg mixture. Repeat until you are out of ingredients, finishing with a layer of cheese. 
  4. Cook on the middle oven rack for about 20 minutes or until the cheese is golden.
