Frittata with Medium Cheddar Cheese, Onions, Peppers & Chives

This recipe for frittata with Medium Cheddar Cheese, onions, peppers, and chives is perfect for lunch… or for Sunday brunch. Have other ingredients on hand? Why not add them to the mix? This Italian recipe is a gourmet way to clean out the fridge!

Ingredients

  • 8 eggs
  • ¼ cup (30 g) Armstrong Medium Cheddar Cheese, grated
  • ¼ cup (30 g) white onion, diced
  • ¼ cup (30 g) red/yellow peppers, diced
  • 1 tbsp (3 g) chives, finely diced
  • 1 tbsp (15 mL) vegetable oil
  • 1 tsp (4.8 g) Saputo butter
  • 2 tbsp (30 mL) 2% milk
  • 1 pinch salt
  • 1 pinch pepper

Directions

  1. Preheat oven to 350°F.
  2. In mixing bowl, beat eggs and milk with whisk.
  3. Heat Teflon coated sauté pan on high heat.
  4. Add vegetable oil until hot.
  5. Quickly add onion & peppers.
  6. Sauté for 1 minute on high while stirring constantly.
  7. Turn heat to low, and continue cooking until onions are half the volume and slightly caramelized.
  8. Remove onions & peppers from pan.
  9. Increase to high heat and add butter and eggs, stirring constantly with rubber spatula.
  10. When eggs start to firm up, add onions, peppers, salt, pepper, and chives.
  11. Turn to low and add cheese evenly over the eggs.
  12. Bake in the oven at 350°F, for 2-3 minutes or until cheese is melted.
  13. Cut the frittata into 8 equal wedges & serve.
