Crustless Bacon and Cheddar Mini-Quiches

Prepared in individual portions, this recipe for crustless bacon and cheddar mini-quiches is a real delight! Cottage cheese and fresh rosemary keep them light tasting, while our Old Cheddar Cheese kicks them up a notch with its bold punch.

Ingredients

  • 6 large eggs
  • 120 mL (½ cup) 35% cream
  • 12 strips cooked bacon, chopped
  • 250 mL (1 cup) cottage cheese
  • 2 green onions, minced
  • 5 mL (1 tsp) fresh rosemary, minced
  • Armstrong Old Cheddar Cheese, shredded, to taste
  • Salt and pepper to taste

Directions

  1. Preheat oven to 190°C (375°F), placing the rack in the middle.
  2. In a bowl, beat eggs with cream, salt and pepper.
  3. Add bacon, cottage cheese, minced green onions and rosemary. Stir until fully combined.
  4. Line a muffin pan with paper cups and pour 60 mL (¼ cup) of the egg mixture into each.
  5. Garnish with shredded Old Cheddar Cheese.
  6. Bake for 20 to 25 minutes. Let cool slightly and serve.
