Chicken Avocado Pockets

Ingredients

  • 1/3 cup (75 mL) garlic mayonnaise
  • 4 pita pockets, halved
  • 1 large ripe avocado, halved, pitted, and thinly sliced
  • 4 tsp (20 mL) lime juice 
  • 8 slices Armstrong Marble Cheddar cheese
  • 2 cups (500 mL) shredded cooked chicken
 

Directions

  1. Spread garlic mayonnaise evenly over the inside of halved pita pockets.
  2. Sprinkle avocado with lime juice; tuck avocado, cheese slice and chicken into each pocket.
  3. Serve.

Tips:

  • Add romaine lettuce or arugula to pita pockets if desired.
  • For added crunch, add a sprinkle of chopped toasted walnuts to pita pockets.
