Gourmet Grilled Cheese

Ingredients

  • 8 slices Multigrain bread
  • 260 g (9,2 oz) Armstrong Cheddar Cheese, freshly grated

 

Olive Tomato Spread

  • 100 g (3,5 oz) black olives (pitted)
  • ½ roasted garlic clove
  • 6 medium semi dry tomatoes
  • 5 tsp (25 mL) olive oil
  • 10 leaves fresh flat leaf parsley
  • ¼ zest of lemon

Directions

Olive Tomato Spread

  1. Combine all ingredients in a food processor until a light, chunky texture is achieved.

 

Assembly and Finishing

  1. Lightly spread butter on both sides of the multigrain bread. On the inside of one slice, evenly spread a small amount of the olive tomato mixture.
  2. Grate Armstrong Cheddar (65 g) on the same half, close the sandwich and place the buttered sides down in a frying pan at low heat until both sides are crisp and golden brown.
  3. Cut in half and serve.
